first harvest

This evening we harvested our first lettuce leaves from our garden.
A month ago, I purchased three good sized starts to put into the first garden bed. 
I just needed to see something green in the dirt and
I was too impatient to wait for my seeds to sprout. 
The root bases were large, so I carefully broke them into chunks and planted them.
Magically, they have grown gorgeous and full.


We picked the larger, outer leaves along with a sprig of apple mint for our salads.
To go with the mixed, young greens, I made a basic balsamic vinaigrette.
The greens were tossed with the vinaigrette then topped with 
candied walnuts and almonds(leftovers from last week), 
grated Parmesan, and a chiffonade of apple mint.
Delicious!

I let the kids put their own salads together from the ingredients laid out.
Having salad that we grew in our own yard made up for the fact that 
our main course was fish sticks and french fries!
